This tasty spice blend, full of the flavors of the sunny Mediterranean, is the perfect companion to fresh crusty bread and extra virgin olive oil for an unforgettable bite packed with flavor. 

 

To make a remarkable olive oil seasoning dip, mix 2 tablespoons Classic OLIVE-OIL BREAD DIPPING Seasoning with ½ cup of your favorite extra virgin olive oil.  Quick Tip: For best flavor gently heat oil with bread dipper for 30-60 seconds in microwave or on the stove top.  You can of course easily adjust this with more or less seasoning to suite the tastes of your friends and family. We like to mix this and let it set for about 30 minutes prior to using as that allows the seasonings to fully marry with the olive oil.  Serve hunks of crusty french bread around little ramekins of this signature blend paired with a top notch olive oil and watch it disappear!


For a tasty vinegar and oil salad dressing, mix 2 tablespoons Olive-Oil Dipping Seasoning with 2/3 cup olive oil and 1/4 cup vinegar, let stand for at least 15 minutes.  
This blend is quite versatile, and it makes a great marinade, using the dressing recipe from above, for chicken, pork or fish. Classic Olive Oil Dipping Seasoning  can also be used as a dry rub for steaks, lamb or pork chops. For the kid in all of us, have a look at old Jacques Pépin videos on youtube (below) to learn about “real,” old school, egg-cellent and delicious French Omelettes.
And, after that, if you’re feeling adventurous try to make one (from start to finish, an omelet should take you no more than a minute or two). Tips when applying Greek seasoning as a Rub
A rub should coat the surface of the meat so work a rub evenly into to the meat to get the flavor inside as much as possible. If you are applying a rub to poultry try and get it in under the skin so it can better absorb the flavor.  Lightly scoring meat, poultry, and fish will help the rub flavors penetrate further.  Apply your rub at least one hour before you plan to grill.  Large roasts, whole poultry, or briskets should be rubbed down the night before or at least several hours before you plan to grill.  This allows the seasonings to mix with the natural juices of the meat and add as much flavor as possible.

Herbes de Provence is a tour of delicate flavors.  This classic blend from the South of France for country cooking, also known as Provençal herbs, is floral, flavorful, fruity & fresh.

Mix all together and then pour onto a baking tray. Bake in medium over until brown. Cool and then separate mixture — add a little sea salt to taste, (great also with almonds!).
    • For a great fajita marinade, mix together 1 tablespoon Kickin' Cajun seasoning, 2/3 cup vegetable oil and 1/3 cup lime juice or vinegar.  Let your chicken, pork, flank or round steak marinate in the fridge overnight, then toss it in a hot cast-iron skillet and cook quickly until done. Serve with bell pepper, onion slices, flour tortillas and sour cream and guacamole for a tasty, easy meal.

Apricot Glazed Bacon Wrapped Cajun Pork Tenderloin

Ingredients:  

  • 1½ pound Pork tenderloin
  • 1 Tablespoon Kickin' Cajun seasoning
  • 2 Tablespoon brown sugar
  • 6 strips bacon
  • 3 Tablespoons apricot preserves
  • 1 Tablespoon grainy Dijon mustard

 Directions: 

  1. Rub the pork tenderloin with the mixture of the Kickin' Cajun seasoning and brown sugar and wrap it up in the bacon.
  2. Heat an oven safe skillet over medium heat, add the bacon wrapped pork tenderloin and cook until it is browned on all sides, about 10-15 minutes.
  3. Transfer the pan to a preheated 400°F/200°C oven, roast until the pork reaches 140°F/60°C, about 10-15 minutes, brushing on the mixture of the apricot preserves and mustard near the end before setting aside it to rest, covered, for 5 minutes.

      A rub should coat the surface of the meat so work a rub evenly into to the meat to get the flavor inside as much as possible. If you are applying a rub to poultry try and get it in under the skin so it can better absorb the flavor.  Lightly scoring meat, poultry, and fish will help the rub flavors penetrate further.  Apply your rub at least one hour before you plan to grill.  Large roasts, whole poultry, or briskets should be rubbed down the night before or at least several hours before you plan to grill.  This allows the seasonings to mix with the natural juices of the meat and add as much flavor as possible.

      Our Rustic Rub is a delicate and harmonious combination, simultaneously earthy, smoky, fennel-y with just the right amount of heat, that offers the perfect balance of sweet fennel and fragrant black pepper flavor, with background notes of aromatic rosemary, thyme, coriander and paprika.       How to Enjoy it
      • If you want to add something a little extra to a rack of tender lamb or a flavorful leg of lamb, you can rub some of Rustic on the meat, to your taste.
      • This delicate blend passes its delectable full-bodied flavor into fish and seafood, and stands up wonderfully to strong flavored or gamey meats.
      • Add to scrambled eggs, or on roasted, steamed or sautéed vegetables for an explosion of flavor.
      • Rub a leg of lamb with fresh extra-virgin olive oil. Slather it with Rustic Rub all over lamb that you've studded with fresh garlic, and roast or grill it, and you have the taste of the Mediterranean right there on your plate. 
      • If you're making lamburgers, whisk some Rustic into your mayo and slather it over a toasted bun.
      • Rustic is also an excellent marinade for pork, and turkey. Mix Rustic with extra-virgin olive and marinate the meat for ten minutes before cooking; the flavor permeates quickly.
      • For pasta dishes, add a little olive oil and sprinkle with Rustic.
      • Whisk some Rustic with Greek yogurt and use it as a spiced yogurt marinade for pork chops, or lamb skewers.
      • Our Rustic Rub has an exquisite flavor. Remember though that it is a very delicate blend and will not hold up to a long or high heat cooking process as that would essentially cook off all of the great subtleties. For those processes, try adding it toward the end of the cooking time so the flavor will shine.

      A lot of people will tell you that a great steak needs no more flavor than a kiss of flame and a pinch of salt.

      The truth is that for any steak, whether a great cut or an inexpensive chunk of beef, the right seasoning is key to getting something spectacular.  Based on the same idea,  Saratoga Steak & Chop® was born.

       Zesty, flavorful and complex, our blend is specifically formulated to work perfectly on beef & pork chop, to enhance but not overpower the flavor, and take the kind of intense heat that a steak needs.  It has a robust flavor explosion designed for the bolder tastes of steaks and burgers.

      We —and some of our friends— have discovered that Saratoga Steak & Chop's charms aren't limited to red meat.  Far from it — from enlivening roast potatoes, to spicing up veggies on the BBQ, to making your simple side salad sing, our all natural, small-batch, makes this spice blend an indispensable partner in the kitchen.  Don't forget to try it on salmon, pork chops, chicken, hash browns, tater tots, and even French fries.  Use it on broccoli, mushrooms, and other grilled or roasted vegetables.  

      When sprinkled on a steak pre- or post-grilling, the taste of Saratoga Steak & Chop is comparable to a deli favorite: pastrami.   One of our personal favorite is actually when it's paired with fish — big tuna, swordfish, or mahi-mahi steaks left overnight in a simple marinade of extra-virgin olive oil and our Saratoga Steak & Chop, then seared quickly on the grill outside or in a cast iron pan on the stove top. 

      The best method to use our blend for seasoning a steak is, first, bring your steak to room temperature for 30 to 60 minutes.  Then, pat the meat dry with a paper towel and apply the spice rub generously (lightly or more to your taste) immediately before cooking (what the meat holds is the amount needed).  Let the steak sit with the rub on at room temperature for 20/30 minutes. This will allow the flavors to absorb and the meat to rise in temperature.  You don't want it more than 30 mins. on in advance as the salt will draw water out of the meat.  This well-rounded rub will provide a nice crust while bringing out the natural flavors of the meat.

      To use Saratoga Steak & Chop in a marinade, add ½ teaspoon of the mix to ¼ cup olive oil, ¼ cup water, and 2 tablespoons vinegar.  Marinate the steak for 15 minutes or more in a plastic bag in the refrigerator before grilling.  Be sure that you dispose of the marinade that has been in contact with the raw meat.  Make fresh marinade if you wish to use it as a baste or sauce.

      ❖ What is Z'HUG, you may be wondering? 

      Native to Yemen — Z'hug is the epic flavor-packed spice revolution you didn’t know you needed.  It's an intense flavor enhancer as much as a flavor on their own.


      Often referred to as the Yemeni parmesan,  Z'hug (Yemeni Arabic: سَحاوِق — Sometimes spell it zhoug, skhug, s'chug, z'hoog, sahawiq) adds an unparalleled wonderful complexity of flavor to dinner centerpieces that will blow your mind.  Adding Z'hug to a dish makes a big impact on its flavor. 

      In Yemen, the Middle East and North Africa, Z'hug is an essentially savory simple sauce, something like a cross between a pesto and a salsa verde, but hotter than either and with an intricate flavor profile.  Z'hug’s versatility makes it more and more popular around the world, and not just in Middle Eastern restaurants and homes.  It has recently become popular in the United States.

      Our product is a dry recreation of the traditional sauce, featuring a meticulously crafted blend of a variety of premium authentic spices.  It has many incredibly devoted fans!

       

      ❖ What Does Z'hug Taste Like?   

      Fragrant, intensely savory, spicy, subtle earthy notes, smokey, slightly citrus finish, with a great depth of flavor and bouquet, and enough heat to satisfy chile fans, but not so much that it overwhelms the other flavors and spices.  The exotically delicious combination is sheer genius. 

      It's a regal spice that adds majesty to dishes, an excellent mystery blend that contributes a whole palette of flavors without dominating an end result.  Everything is dialed in — the scent, the color, the texture, the flavor. 


      ❖ How do You enjoy Z'hug?  →  So many ways! 

      • Z'hug complements almost any dish and adds an undeniable punch of flavor to salads to fish, sandwiches, soups, pastas, and pizzas.  
      • This spirited seasoning can also be used as a dry rub for meat, in marinades, sprinkled on veggies and beans, and to add heat to any dish that could use a little kick.
      • Dollop into soup and stews just before serving or mixed through rice or quinoa for a quick shortcut to flavor.  
      • It is especially great in couscous or quinoa, as well as with dips such as hummus and baba ganoush.
      • Add it to apple chips or dried fruit. Or sprinkle on French fries. 
      • Toss a couple pinches of Z'hug over a fresh salad of red quinoa, wild arugula, scallions, crumbled Feta cheese and a lime vinaigrette, for an unexpected (but delicious) touch of heat.
      • We've used Z'hug as a dipping sauce for pita bread or roast potatoes, and as a bruschetta and pizza topping (with burrata and wilted greens).
      • It's also fantastic stirred into a bowl of green lentils with garlic sausage or beluga lentils with grilled octopus (that last one is amazing).
      • A spoonful enlivens a bowl of vegetable or bean soup; it can transform a simple pasta or grain dish.   
      • We haven’t tried Z'hug as pizza crust yet but I suspect that it would make a delightful breadstick (recipe likely coming soon).
      • Z'hug even makes tofu taste good. Use it to marinate shrimp, make a terrific crust (with breadcrumbs or nuts) for salmon or a rack of lamb, or spoon it under the skin of a chicken or Cornish game hen before roasting.
      • Try spatchcock a chicken, sprinkle it with sea salt, then sprinkle Z'hug all over. Then squeeze a lemon's worth of juice on it and bag it up. In about two hours throw it in a hot oven. 
      • Try scrambled eggs wrapped in a tortilla with cheese and Z'hug, topped with sour cream and black pepper.
      • Use it as a garnish on top of hummus with pickled things, meat kabobs, and falafels.  Zhug is the key to hummus happiness!
      • Also makes a great addition to artisan burgers.
      • Can be used with yogurt, sour cream or hummus as a flavorful dip for vegetables.  Mixed with a little olive oil and some lemon juice makes it a zippy salad dressing.
      • Brings Z'hug to the table in hot sauce form! Our Z'hug spice blend can also be used as a paste—a little bit of olive oil, water, vinegar, or wine are instrumental in achieving the right (pesto) consistency.  That said, this paste would be a great option if you’re making a marinade or rub for meat, or to create a versatile topping for savory breakfast bowls with tomato, zucchini and chickpea with crumbled bacon, ...it will change your hot sauce experience.  When we sample the Z'hug at shows or at the Saratoga Farmer's Market we just add olive oil (50/50 mix) until we have the consistency we want, and we use it sparingly as a garnish for Hummus, or to make a dip appetizer by using Greek yogurt, or feta cheese, or cream cheese, or sour cream.

      ❖  What exactly is Za'atar?  

      Besides a spice blend, a wild herb, a dip, a condiment, and a snacking equivalent of popcorn, it's an ancient cultural icon.  Za'atar (pronounced "Zah-tar") is a common traditional versatile everyday spice blend found throughout the Middle East and the Mediterranean.  

      It's vibrant and aromatic, yet toasty and savory; and adds instant flavor and oomph straight out of the jar.  Za'atar is one of our flavor-boosting pantry secrets. Its versatility is astounding, not to mention delicious.  Sprinkle over roasted vegetables, whisk into salad dressings, add to marinades and sauces, or even use as a fun, unique garnish for deviled eggs.  Try it on hummus, baba-ganoush, cucumber yogurt sauce or roasted pepper feta dip. 

      The blend is diverse in its applications because it balances the earthiness of French Thyme—which lend woodsy accents, the nuttiness of slow-toasted Sesame Seed, and the tartness of Sumac Berry, who provides an acidic lift, a superb substitute for lemon juice.  We recommend using our Za’atar on meats and vegetables, but don't underestimate its ability to become a tasty addition to flatbread, when mixed with olive oil.

      We blend hand-rubbed and then freshly ground French Thyme, add toasted white and black Sesame Seed, pungent Sumac Berry, Turkish Oregano, Indian Coriander, and delicate Egyptian Marjoram. A slight pinch of Himalayan Sea Salt seals together all the flavors, producing an earthy blend with strong tart and nutty notes.

       

      ❖  Simple ideas with Za'atar

      —Za'atar is most frequently used as a table condiment, dusted on food on its own, or stirred into some olive oil as a dip for soft, plush flatbreads. That spread is often applied to the bread before baking, which lends incredible depth of flavor to the herbs and sesame seeds.
      —drizzle goat cheese or feta with olive oil & sprinkle Za'atar on top.
      —make a vinaigrette with olive oil, balsamic, and Za'atar, allow to infuse for at least 30 minutes. Use on salads or veggies.
      —grind Za'atar in a spice grinder and fold it into aioli.
      —sprinkle over sliced ripe tomatoes and cucumbers; garnish with lemon basil.
      —sprinkle on fried eggs or deviled eggs.  Or mix with goat cheese and fill an omelet.
      —mix into savory yogurt for a simple treat that will have you transported to the Mediterranean in no time.
      —sprinkled on pizza or in shakshuka.  Use in a dressing for a carrot salad with raisins.
      —sprinkle on vegetables, salads, meatballs or kebabs.  Or combine with breadcrumbs for your breaded chicken or pork cutlets.
      —dunk some bread (such as pita) in flavorful olive oil and then dip the oil soaked bread in the Za'atar. Have a side of olives, finish with thick rich arabic coffee or mint tea.
      —sprinkle Za'atar over plain yogurt and drizzle with olive oil, and you've got a terrific dip.
      —tossed with olive oil and carrots and kale and then roasted. Or toss with cauliflower, chickpeas and tomatos, drizzle with extra-virgin olive oil and bake. 
      —Za'atar also makes a superb dry rub for roast chicken or lamb, as well as on firm or starchy vegetables like cauliflower or potatoes.
      —add some Za'atar to your next batch of lemon cookies—lemon, thyme, and sesame are a trio on par with tomato, basil, and mozzarella, perfect in sweet and savory foods.
      —some people eat Za'atar as-is, out of hand, and it's strangely addicting. When paired with popcorn, even more so.  To get the most out of Our Za'atar, we fry it in olive oil with other aromatics to gain depth of flavor, and then add some more at the end to keep its herbal notes intact.

      —You'll be hard-pressed to meet a savory food that doesn't benefit from some Za'atar love.  

      — For a quick marinade, mix a quarter cup of extra virgin olive oil with a couple teaspoons of Za'atar, the zest of a lemon and a hearty pinch of salt.  Use with chicken, beef, lamb, fish and seafood or vegetables (we are particularly smitten with slices of eggplant marinated and then grilled until lightly charred and tender).
